Winter Kale Salad


  • 1 bag de-stemmed curly kale
  • 1/2 cup walnuts
  • 1/2 cup feta
  • Brussels sprouts (halved)
  • Prosciutto
  • 1 sliced gala apple
  • Butter or ghee
  • Salt and pepper
  • Honey Dijon dressing

Heat butter or ghee in a pan over medium-low heat. Add Brussels sprouts cut side down and cook until soft. Sprinkle with salt.

Combine all ingredients in a large bowl (except dressing). Season with salt and pepper.

Drizzle dressing (you can also toss kale in dressing about 20 minutes prior to building salad if you prefer the kale softer).
