2 Pears (ripe but still firm)
3 cups thinly sliced sweet onion
1 cup arugula
2 tsp Olive oil
2 tsp balsamic vinegar
2/3 cup crumbled blue cheese
Whole wheat flatbread
salt and pepper
Heat oven to 450 degrees
Cook thinly sliced onions over medium-high heat until caramelized (about 6-7 minutes) season with salt, pepper and balsamic.
Place premade flatbread on a greased baking sheet and cover with sliced pears, onions and arugula, then sprinkle with blue cheese.
Drizzle with olive oil and place flatbread in oven for about 10 minutes.
When flatbread is crispy and the cheese has melted remove from over and drizzle with balsamic glaze.
